Mediterranean Lentil Soup
Serves 11 ⢠Serving Size: 1 cup ⢠Prep Time: 15 minutes
1 Tbsp olive oil
1 cup celery, diced small
1 medium onion, diced small
2 cloves garlic, minced
10 oz fresh spinach
1 cup dry lentils
Zest of one lemon
Juice of one lemon
1 28-oz can no-salt-added diced tomatoes
80 oz reduced-sodium, fat-free chicken broth
2 cups whole-wheat penne pasta, uncooked
1. In a large stock pot over medium-high heat, add olive oil and sauté celery, onion, garlic, and spinach until onions turn clear. About 5 minutes.
2. Add remaining ingredients, except pasta.
3. Bring to a boil, reduce to simmer, and cook for 40 minutes.
4. Add pasta and cook an additional 10 minutes.
Cooking Tip
Cooked ham or smoked turkey sausage can be added to this soup for extra protein.
